We do know Cocoa, but what is gofio? Where does it come from, and how is it made?
Gofio is a very typical food of the Canary Islands, eaten by the aborigines as a fundamental part of their diet.

Although it is not only eaten on the Islands, it also exists in many parts of the world (North of Africa, Argentina, Chile, Cape Verde,…) and has different names (ñaco, toasted flour, cocho, pinole, …).
To produce gofio, firstly, the cereals, legumes, and corn grains are toasted. After cooling, the already-toasted grains are ground and sifted until obtaining a very fine flour. This toasted grains flour is called gofio (we can find it with a single ingredient or different mixtures and degrees of toasting).

The combination of gofio and cocoa creates a delicious and nutritious preparation. I prepare a mixture with a proportion of 70 % gofio and 30 % cocoa, and without sugar. You can also add a little sugar to give the Gofiocao a sweeter flavour.
This mixture is perfect to incorporate into milk or vegetable drinks, offering a balanced flavour and a smooth texture. Gofiocao provides the antioxidant benefits of cocoa and the fibre and energy of gofio. Making it an ideal option for a healthy breakfast or afternoon snack without all the sugar used in commercial cocoa preparations.

If you are lucky enough to live in the Canary Islands and you do not feel like making your own Gofiocao, you can buy “Goficao” from “La Isleña” company. An instant cocoa preparation composed of corn gofio (40 %), sugar, cocoa (20 %), emulsifier (soy lecithin), salt, and flavouring.

GOFIOCAO
INGREDIENTS (For 110 g of gofiocao)

- 70 g Gofio
- 30 g Cocoa
- 10 g Icing sugar (optional)
PREPARATION
Firstly, weight the ingredients. Starting with the gofio, the cocoa and lastly, icing sugar (I do not add sugar, but if you want to sweeten the preparation a little, you can add it optionally).
Finally, mix the ingredients until achieve a homogeneous mixture.
The last thing to do is to store the mixture in an airtight jar or container. You can prepare the mixture in a bowl or even directly in the jar (it will take you a little more to mix the ingredients, but you will safe transferring them from the bowl to a final container).
Add a spoonful of Gofiocao to a cup warm milk or vegetable drink and stir until the lumps dissolve. Cocoa powder is not very soluble in water or milk, so you will always have these characteristic lumps).
To reduce the number of lumps (although you will not eliminate them completely), you can add a spoonful of Gofiocao in a little milk and mix, and once the Gofiocao is hydrated, add the rest of the milk you want to drink.
Finally, Enjoy Gofiocao in your breakfasts or afternoon snacks!
