VEGAN OAT BISCUITS

INGREDIENTS (For 12 biscuits)

  • 75 g oat flakes
  •  75 g rice flour
  • 50 g sugar
  • 50 g olive oil (0,4 º)
  • 30 g vegetable milk
  • 30 g chocolate chips
  • 1 teaspoon baking powder
  • 1 teaspoon maple syrup

PREPARATION

Preheat the oven to 180 ºC. Heat up and down, without a fan. Place baking parchment on a baking tray.

Add the rice flour in a bowl. Mix it with baking powder, oats, sugar and chocolate chips.

Blend the olive oil (you can also use sunflower oil instead), maple syrup and vegetable milk. Add them to the dry ingredients and mix until everything is well combined.

You have to achieve a quite homogeneous dough; with no differentiation of ingredients (apart from the chocolate chips, which will be visible).

Take a spoonful of dough or use a scale to obtain biscuits of similar size. This recipe weights around 320 g of dough, so you can make:

  • 9 biscuits, 35 g each
  • 10 biscuits, 32 g each
  • 12 biscuits, 26 g each
  • Cookies with the weight you want!

I have decided to make 12 vegan biscuits, but you can make them however you want! You only have to take into account that they have similar sizes, so they will have homogeneous baking. Oh! And the tray size you will place them in.

Before placing them on the tray, finish rounding the dough with another spoon or simply balling the dough using your own hands (it is quite easy as the recipe has oil, so the dough will not stick in your hands), place the dough in the tray and flatten it a little, but not too much to avoid them from being too flat and sticking together.

There may be a lot of dough on the outside and the chocolate chips may not be very visible… There you have a couple of tips to make your cookies more appealing:

  • When you finish balling and placing the biscuits in the tray, use your fingers to remove some of the dough and leave the chips visible and strategically placed
  • If not, save some chips (about 3 – 4 per cookie) to place on top of the biscuits just before baking

If you do not do this, the biscuits will be just as tasty, but the visual will be less “chocrottactive”!

Bake for 10 – 15 minutes or until the edges are golden brown and crunchy (the centre of the biscuits will be soft).

Once baked, remove the tray from the oven and let the biscuits cool on a wire rack. Now all you have to do is enjoy them!
