During the week I cannot spend as much time as I would like on breakfast, and I end up eating something quick like toast or cookies. But on the weekend, where I can have more time, I like to enjoy a good breakfast. A breakfast that includes pancakes!
One of the basic recipes to the weekend are crepes recipe, and it is been a while since I wanted to make pancakes, but I had never dared because I thought they were very difficult to make.
But nothing could be further from the truth! To make good pancakes you do not need much prior cooking knowledge, you simply need to mix all the ingredients and cook them on both sides in a pan.
You do not need a specific pan to make them (although they do exist and are sold). Simply use a non-stick pan. The larger the pan, the more pancakes you can make at once, finishing sooner and ensuring that all your pancakes stay warm when you are ready to eat them.

The ancient Greeks and Romans already consumed something similar to pancakes, and sweetening them with honey. Moreover, many history books explain that as early as the 4th or 5th century AD, pancakes were prepared by Christians on Shrove Tuesday or before the start of Lent.

By making this old recipe at home, we can prepare spectacular pancakes! We can add syrup, chocolate, honey, jam or marmelade, cream or fruits like strawberries, red berries or banana.
Or simply eating them alone with sugar on top… However you make them, you will love their flavour and texture!
An essential tip: Add a little oil or butter when heating the pan. Once it is hot, remove it with some paper and pour the pancake batter. With this, you will ensure that all your pancakes come out well and without sticking!
I admit that I prefer to eat them for breakfast with any sweet ingredient (jam, chocolate, syrup, fruits, …) but you can also eat them for a snack in the afternoon or even for dinner. They are perfect for any time of the day!

PANCAKES
INGREDIENTS (For 15 – 20 pancakes around 10 cm diameter)
- 200 g flour
- 200 g milk
- 2 eggs (L)
- 3 tablespoons (45 g) of sugar
- 12 g baking powder
- 1 hint of salt
PREPARATION
In a blender glass, add all the ingredients: 200 g of flour, 200 ml of milk, 3 tablespoons (45 g) of sugar, 2 eggs (L), 12 g of baking powder and a hint of salt.
Whip all the ingredients until everything is well combined.
Once combined, it is needed to let the batter rest. You can let it rest for around 10 minutes at room temperature, or between 10 minutes and 1 hour in the fridge. It is good to do this to let the dough or batter and the gluten relax. But be careful, just have the batter the right amount of time because it you let it rest for a long time, the baking powder will work more during resting and less in the pan.
In a pan with medium heat (5 -6 out of 9), add a drizzle of oil or butter (it gives it extra flavour).
You do not need a specific pan to make them (although they do exist and are sold). Simply use a non-stick pan. The larger the pan, the more pancakes you can make at once, finishing sooner and ensuring that all your pancakes stay warm when you are ready to eat them.
When the pan is hot, remove most of the oil or butter with a napkin or kitchen paper. With this, you will get perfect pancakes without sticking!

Add the mixture (previously whipped) to the pan. Calculate to make about 8 – 10 cm in diameter. You can use a ladle or some container to measure or do it by eye (they will have different sizes … more homemade style).
Cook the dough for 30 seconds or until you see bubbles forming on the surface.
Flip the pancake and cook the other side for 30 seconds or until done.
Stack the pancakes on top of each other and coat them with whatever you like best!

- In a pan with medium heat (5-6 out of 9), add a drizzle of oil
- When the pan is hot, clean most of the oil with a kitchen paper
- Add the mixture (previously whipped) to the pan. Calculate to make a pancake about 8 - 10 cm in diameter
- Cook the dough for 30 seconds or until you see bubbles forming on the surface
- Flip the pancake and cook the other side for 30 seconds or until done
- Remove the pancake from the pan and place it on a plate
- Stack the pancakes on top of each other and coate with whatever you like best
