PUMPKIN BREAD
INGREDIENTS (For 1 Pumpkin bread)
- 400 g pumpkin
- 200 g flour
- 100 g butter
- 2 eggs (L)
- 100 g brown sugar
- 100 g sugar
- 1 tablespoon baking powder
- 1 tablespoon cinnamon
- 1 teaspoon clove
- 1 teaspoon nugmet
- 1/2 teapoon salt
- 1/2 teaspoon ginger
PREPARATION
For the pumpkin bread, I use 400 g of fresh pumpkin. However, some people use canned pumpkin (400 g) and you can also cook the pumpkin (like you can do in the carrot cake) before mixing it with all the ingredients.
But I cut the pumpkin very finely and added it to the mixture. And I let the pumpkin cook while the bread is baking.
To get about 400 g of pumpkin pulp, you need approximately 520 g of raw pumpkin (with rind and seeds).
Do not worry if instead of 400 g you have 420 g or 380 g, the bread will turn out just delicious! For example, in the pictures above, from 505 g of whole pumpkin, I got 386 g of pumpkin pulp. And I can assure you that it was spectacular!
After removing the skin (or the rind) and the seeds from the pumpkin, grind it in a mincer.
Next, grease the bread mould with oil.
Mix all the ingredients in a bowl until everything is well combined.
Once mixed, pour the mixture in the mould and put it in the oven.
Bake at 180 ºC for around 50 minutes.
Once baked, lastly remove the bread from the oven, cover it with a tea towel, and leave it to cool.

Preparation
- Pell the pumpkin and grind it in a mincer
- Grease the cake mould with oil
- Add all the ingredients in a bowl and mix them until everthing is well combined
- Once mixed, pour the mixture in the mould and put it in the oven
- Bake at 180 ºC for around 50 minutes
- Once baked, remove the bread from the oven, cover it with a tea towel and leave it to cool
