THE BEST CINNAMON ROLLS RECIPE

There is something magical about cinnamon rolls, isn´t there? those cinnamon-filled pastries that end up trapping you with their spirals…

I have tried many recipes, but this one is, without a doubt, the ultimate. I would not change a single gram of any ingredient, and the texture of the dough… well… Simply spectacular!

Cinnamon rolls, one of the most popular pastries worldwide, are often associated with Anglo-Saxon culture; many believe they originated in the United States. However, cinnamon rolls were born in Sweden in the early 20th century. They just celebrated their centenary, and they are as delicious as ever!

But what exactly are cinnamon rolls? They are a tender and fluffy dough filled with a mixture of sugar, butter and cinnamon. The dough is then rolled up, cut into cylinders, and baked after allowing them to leaven.

After baking, they are topped with pearl sugar or frosting, making them even more irresistible! But if you are not as sweet-toothed, you can enjoy them plain without extra toppings.

Sweedish cinnamon rolls have cardamom instead of icing and are called “Kanelbullar”.

If you travel to Sweden, do not be surprised if you see cinnamon rolls everywhere. You will even find a variation of these rolls called “Kanelbullar”, which includes cardamom instead of frosting.

These cinnamon rolls have been and continue to be so popular that since 1.999, every October 4th is celebrated as “Cinnamon Rolls Day” or “Kanelbullens dag” in Sweden and Finland. It is a day to honour the wonder of cinnamon and share these delicious rolls with friends and family.

But also, on the other hand, they are very easy to prepare. Although they might seem complicated, taking about 4 hours, they are a simple recipe.

CINNAMON ROLLS

 INGREDIENTS (For 8 – 12 cinnamon rolls)

Dough

  • 400 g High protein flour
  •  100 g warm milk
  • 50 g warm water
  • 50 g butter
  • 1 egg (L)
  • 50 g sugar
  • 25 g fresh yeast
  • A hint of salt

Filling

  • 100 g brown sugar
  • 50 g butter
  • 2 tablespoons of cinnamon

Frosting

  • 100 g spread chees (minimum 20 – 25 % fat)
  • 100 g icing sugar
  • 25 g warm water

PREPARATION

Dough preparation

Firstly, we need to activate the yeast by dissolving it together with the sugar in the warm water and milk (around 35 – 40 ºC). Stir and wait for about 10 minutes to activate the yeast.

Secondly, after 10 minutes, in a bowl, add the flour, salt, and egg, and while mixing, add little by little the freshly prepared liquid mixture.

Once everything is minimally mixed, mix for about 5 minutes. After that time, add the butter cube by cube (about 1,0 – 1,5 cm in size) and mix for an additional 10 minutes. Depending on whether you are using a mixer or you are using your hands, the mixing times may vary, but the key is to achieve a smooth and soft dough in the end.

Finally, place the dough in a large bowl, cover the bowl with plastic wrap, and let it rise until it doubles in size (approximately 1 to 2 hours in a place at room temperature).

Rolls preparation

Firstly, bring the butter to room temperature.

Secondly, in a bowl, mix the butter with the sugar and the cinnamon, the other two ingredients of the filling.

With a rolling pin, stretch the dough into a rectangular shape. Roll it out enough to create a 3 – 4 mm thick layer.

Brush the filling over the dough and roll the dough. Cut into 8 – 12 rolls (depending on the thickness you want for each roll), place them in a mould, cover it with plastic wrap and leave to rise until they fatten (about 1 hour).

Baking and frosting preparation

After the fermentation, bake the rolls at 180 ºC for 15 minutes. Remove them from the oven and let them cool a little.

However, if you cannot bake the rolls on the same day, you can place them in the refrigerator and let them rise there (it will take longer, so we let them overnight in the refrigerator).

After baking, you can eat them alone, with pearl sugar, or with a frosting on top.

And for the frosting, mix in a bowl all ingredients (spread cheese, icing sugar and warm water).

After mixing, cover the rolls with the frosting and enjoy them!

  • Mix warm water and warm milk with the sugar and the fresh yeast. Stir and let it stand around 10 minutes to activate the yeast
  • After that, in a bowl, add the flour, salt and one egg
  • Mix all the ingredients for 5 minutes, adding little by little the freshly prepared liquid mixture
  • After that time, add butter cube by cube and mix for 10 - 15 minutes more (until achieve a soft and smooth dough)
  • Place the dough in a big bowl, cover the bowl with film and let it rise until it doubles in volume (between 1 or 2 hours)
  • Rolls Preparation
  • In a bowl, mix all the filling ingredients (water, brown sugar and cinnamon)
  • With a rolling pin, stretch the dough into a rectangular shape
  • Brush the filling over the dough and roll the dough. Cut into 8 - 12 rolls, place them in a mold, cover with film and leave to rise until they fattening (about 1 h)

  • Bake the rolls at 180 ºC for 15 minutes. Take them out and let cool a little
