Flapjacks is an oats British recipe that has been enjoyed for generations. They are delicious and super easy to make!
And on top of that, you only need four ingredients: oats, butter, brown sugar and golden syrup (also called inverted sugar syrup). Four ingredients that can be found in every grocery or store!
During our last visit to our British friend Rosy, we were delighted by the surprising snack she prepared for the country walk we did. This snack was lovely, with an amazing flavour and texture.
What is that, granola bars? I asked her, and she told me those were not granola bars, they were flapjacks. Because they are different!
Flapjacks is an oats British recipe that has been enjoyed for generations. They are delicious and super easy to make!
The first difference is the ingredients of both products: Flapjacks are made with rolled oats, butter, brown sugar and golden syrup, while granola bars can be made with a variety of ingredients apart from the previous four ingredients, such as nuts, seeds or dried fruit.
Flapjacks have a higher content of sugar and butter, so they are more indulgent, while oat bars are a healthier snack than flapjacks (but they still have a high content of sugar and fat).
Another difference is the texture. Flapjacks are dense and chewy, with a slightly crunchy texture from the oats. They are quite firm and hold together well.
Granola bars can have a crunchier texture and are generally firmer than flapjacks. Granola bar texture may vary depending on the ingredients used, with some recipes resulting in a softer or crumblier bar.
Flavours and variations are another difference. Flapjacks have a rich buttery flavour with notes of caramel from the golden syrup.
Oat bars can have a wider range of flavours depending on the ingredients used. Some popular oat bar flavours are peanut butter, chocolate, redberries, almond, cinnamon, raisin, …
In summary, while flapjacks and oat bars share common ingredients as oats, they differ in the rest of the ingredients, texture, and flavour.

When arriving home after the walk, Rosy showed me her family´s recipe book when we returned home. In there, it was this flapjack recipe.
I just only “copy-paste” this old family recipe and add little “touches” or “twists” to the recipe to adapt it to my way of cooking.
And now, I am sharing it with all of you. This way you can also make and enjoy this delight wherever you want! It is a super easy recipe; from the first time you make it, you will have an amazing product! There is no room to fail!
These flapjacks are the perfect “on the go” product, and ideal for beginner bakers. Hope you like it!

Preparation time: 1 hour
Baking time: 30 minutes
FLAPJACKS
INGREDIENTS (For 12 – 15 flapjacks)
- 120 g rolled oats
- 60 g butter
- 60 g sugar (brown if possible)
- 1 tablespoon (15 g) golden syrup
PREPARATION
Preheat the oven to 170 ºC. Heat top and bottom, without a fan.
Cream together the creamy butter with the sugar.
Add the warm golden syrup to the mixture and continue beating. Optionally, you can use extra ingredients to take the flapjacks to another level (chocolate, dried fruits or raisins).
Work in the rolled oats and mix until everything is well mixed. The trick is not to overmix the mixture; you do not want to break the oats and lose their texture as a consequence.
Spread the mixture in a well-greased shallow tin (20 x 15 cm approx.).
Put into the oven and bake at 170 ºC for around 30 minutes or until golden brown.
Allow to cool a little before cutting into fingers (they have to be still warm).
Do not turn out of the tin until they are quite cold. If they are still warm, they can break down.

- Add the warm golden syrup to the mixture and beat

- Spread the mixture in a well-greased shallow tin (20 x 15 cm)
- Put the tin into the oven and bake at 170 ºC for around 30 min or until golden brown in colour
- Allow to cool before cutting into fingers
- Do not turn out of the tin until they are quite cold
